Roasted Chicken with Roasted Potatoes and Steamed Green Beans

Try our heavenly Roasted Chicken with Roasted Potatoes! Succulent, juicy chicken perfectly paired with crispy, golden potatoes – this dish is nothing short of a flavor explosion! Treat yourself to this comfort food classic, prepared with love and the finest ingredients.


Ingredients

Scale
  • 1 whole chicken
  • 2 tsp fresh garlic
  • dash of sea salt
  • 1 teaspoon chicken spices
  • Spices, pepper, black
  • 1 teaspoon dried rosemary
  • 3/4 onion
  • 12 baby potatoes
  • 24 green beans
  • 2 teaspoons fresh parmesan

Instructions

  1. Preheat oven to 350F/180C
  2. Wash and clean the chicken properly.
  3. Add a mix of spice, onion, and garlic to the bottom of a casserole.
  4. Place chicken in the casserole, and spice again as above.
  5. We usually place some onion in the cavity and some on top of the chicken as well
  6. Cover with casserole dish lid and bake for 1½ hours till tender.

Roasted Baby Potatoes

  1. Peel, place around the chicken in the casserole, and bake together with the chicken.
  2. Once the chicken is tender and done, spoon out the potatoes and place them in a separate dish and drizzle the bottom with oil.
  3. We lightly drizzle some oil over the potato as well and then seasoned with a seasoning salt (your own preference)
  4. Return to the oven and bake till crisp.
  5. It’s so soft and moist on the inside and will have a crispy outer shell.
  6. I turned the oven on broil, but keep an eye on the potatoes as this can easily burn to charcoal.
  7. When potatoes nearly done, return the chicken casserole, without the lid, to the oven and grill/broil the top of the chicken.

Steamed Beans

  1. This is the easiest and healthiest way and we do not do veggies any other way.
  2. Only top and tail the beans, wash, place in the steamer, and steam till al dante.
  3. Dish us, and sprinkle beans with a pinch or two of fresh parmesan cheese if you care for it.
