- 1 ripe avocado
- A few strips of smoked salmon
- 2 eggs
- 1 teaspoon chili flakes
- Fresh dill, for topping
Instructions
- Set your oven to 220°C (428°F).
- Cut the avocado in half and remove the pit.
- Use a small spoon to carefully scoop out a bit more flesh from each half, just enough room to hold an egg.
- Lay the avocado halves on a baking tray.
- Add a few strips of smoked salmon to each hole.
- Crack your eggs into a small bowl.
- Gently spoon the yolk (and as much egg white as fits) into each avocado half over the salmon.
- Bake for 15–20 minutes, depending on how runny or set you like your yolk.
- Top with chili flakes and a bit of fresh dill.
- Done. No extra dishes. No complicated prep. Just scoop and eat.
