Description

Creamy, smoky, and packed with protein, this is the kind of meal that keeps you full and feeling good. It takes less than 30 minutes from start to finish and works great for breakfast, lunch, or even as a light starter.


Ingredients

  • 1 ripe avocado
  • A few strips of smoked salmon
  • 2 eggs
  • 1 teaspoon chili flakes
  • Fresh dill, for topping

Instructions

  1. Set your oven to 220°C (428°F).
  2. Cut the avocado in half and remove the pit.
  3. Use a small spoon to carefully scoop out a bit more flesh from each half, just enough room to hold an egg.
  4. Lay the avocado halves on a baking tray.
  5. Add a few strips of smoked salmon to each hole.
  6. Crack your eggs into a small bowl.
  7. Gently spoon the yolk (and as much egg white as fits) into each avocado half over the salmon.
  8. Bake for 15–20 minutes, depending on how runny or set you like your yolk.
  9. Top with chili flakes and a bit of fresh dill.
  10. Done. No extra dishes. No complicated prep. Just scoop and eat.
