Description

These little Sweet Mince Pies are one of those treats that look like you spent ages making them, even though they come together surprisingly quickly. The ready-rolled pastry does most of the work, while the sweet mincemeat filling and icing sugar finish make them feel extra special.


Ingredients

  • 1 ready-rolled sheet of shortcrust pastry
  • Approx. 12 tsp sweet mincemeat
  • 1 beaten egg, for egg wash
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 350⁰F (180⁰C) and lightly grease a 12-cup shallow muffin pan.
  2. Unroll the 1 ready-rolled sheet of shortcrust pastry and place it over the muffin pan.
  3. If you prefer, use a sharp knife or pastry cutter, cut the pastry horizontally and vertically so you have enough squares to line each muffin cup.
  4. Gently press the pastry squares into the muffin cups, making sure the corners remain slightly above the edges.
  5. Spoon about 1 tsp sweet mincemeat into the centre of each pastry case. Avoid overfilling, as the filling can bubble over while baking.
  6. Pull two opposite pastry corners toward the centre and pinch them together lightly, then do the same with the other two, bringing them to the centre. Repeat with the remaining pies.
  7. Brush the tops and exposed pastry edges with the 1 beaten egg.
  8. Bake for 15 to 18 minutes, or until the pastry is lightly golden and cooked through.
  9. Leave the pies in the pan for about 5 minutes before carefully transferring them to a wire rack to cool completely.
  10. Once completely cooled, dust generously with icing sugar before serving.
