These Spicy Mustard Nuts are my new go-to snack. A little sweet, a little heat, and seriously addicting. Made with almonds, walnuts, cashews, and a simple mustard spice mix, they roast up golden and full of flavor in under 30 minutes.

- 1 cup walnut halves
- 1 cup natural almonds
- 1 cup raw cashews
- 1 cup shelled pistachios (or use macadamias like I did if you can’t find pistachios)
- 1 tbsp extra-virgin olive oil
- 1 tbsp Dijon mustard
- 2 tbsp packed brown sugar
- 1 tbsp dry mustard
- 1 1/2 tsp ground coriander
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 300°F (150°C).
- Line a baking sheet with parchment paper.
- In a large bowl, toss together the walnuts, almonds, cashews, pistachios, olive oil, and Dijon mustard until everything is well coated.
- In a small bowl, mix the brown sugar, dry mustard, coriander, salt, cayenne, and pepper.
- Sprinkle this over the nuts and stir until evenly coated.
- Spread the nuts in a single layer on your prepared baking sheet.
- Bake for 20–30 minutes, stirring halfway through, until they smell toasty and look golden.
- Let them cool completely before storing in an airtight container.
- They’ll stay fresh for up to a week, if they last that long!
