Description

This Squish Bake Bread in a Bag is one of those clever little kitchen tricks that actually works. Everything starts right in a plastic bag, which means less mess, fewer dishes, and, honestly, a bit of fun while mixing.

  1. Grab a large resealable plastic bag.
  2. Add 1 cup all-purpose flour, 3 Tbsp white sugar, and 1 package rapid-rise yeast.
  3. Pour in 1 cup of warm water
  4. Press the air out of the bag and seal it well.
  5. Now squish everything together with your hands until it looks like a thick batter. It might feel a bit odd, but it works.
  6. Set the bag on the counter for 10 minutes. You should start seeing bubbles forming in the dough.
  7. Open the bag and add 1 cup all-purpose flour, 3 Tbsp olive oil or vegetable oil, and 1½ tsp salt.
  8. Seal the bag again and squish the dough until it’s mostly smooth. It’ll thicken up quite a bit at this stage.
  9. Add the remaining 1 cup of all-purpose flour.
  10. Seal the bag and keep squishing until the dough comes together and feels soft but not overly sticky.
  11. Dust your counter lightly with flour and remove the dough from the bag.
  12. Knead it for 5 to 10 minutes until it becomes smooth and elastic. If it sticks to your hands, sprinkle a little extra flour as needed.
  13. Divide the dough in half for two mini loaves or keep it whole for one larger loaf.
  14. Place the dough into lightly greased loaf pans.
  15. Cover the pans with a clean kitchen towel and let the dough rise in a warm spot for about 30 minutes, or until it looks puffy and slightly doubled.
  16. Bake in a 375⁰F (190⁰C) oven for 25 to 30 minutes.
  17. The top should be golden brown, and the loaf should sound hollow when tapped.
  18. Let the bread rest in the pan for about 10 minutes, then move it to a rack and let it cool down before slicing, it’s just easier.
