Description

These sticky bacon-wrapped chicken parcels come out juicy, smoky, and just a little messy due to the sticky sauce. The maple BBQ glaze caramelizes as it cooks, and honestly, it’s hard not to sneak one straight off the tray.


Ingredients

  • 2.2 lb = 1 kg boneless, skinless chicken breast, cut into bite-size chunks
  • 2 cups CattleBoyz Original BBQ Sauce
  • 1 tbsp cider vinegar
  • 1 tbsp white vinegar
  • 2 tbsp Worcestershire sauce
  • 3 tbsp minced garlic
  • 2 tbsp maple syrup
  • Thick sliced bacon (about 12 to 16 slices, depending on size)

Instructions

  1. In a bowl, mix the 2 cups of BBQ sauce, 1 tbsp cider vinegar, 1 tbsp white vinegar, 2 tbsp Worcestershire sauce, 3 tbsp minced garlic, and 2 tbsp maple syrup until well combined.
  2. Cut the 1 kg chicken breast into evenly sized bite-sized chunks, so they cook at the same rate. Try not to go too small, or they will dry out faster than you want.
  3. Add the chicken pieces to the sauce and toss until fully coated.
  4. Cover and refrigerate for 1 to 2 hours.
  5. If using the oven, preheat to 400⁰F (200⁰C).
  6. Lightly oil a baking dish or line it with parchment for easier cleanup.
  7. Take each piece of marinated chicken and wrap it with thick-sliced bacon.
  8. You’ll likely use about half a slice per piece, depending on size.
  9. Secure loosely, no need for toothpicks unless they’re unravelling.
  10. Place the wrapped chicken parcels in the baking dish with a bit of space between each one. Don’t crowd them or they’ll steam instead of crisp.
  11. Brush a little of the leftover marinade over the parcels, but don’t overdo it or the bacon won’t crisp properly.
  12. Bake for 20 to 25 minutes, then switch to broil for about 5 to 10 minutes to crisp up the bacon.
  13. If using a BBQ, cook on the upper rack over indirect heat for 25 to 30 minutes. Turn occasionally so the bacon crisps evenly.
  14. Let them sit for a few minutes before serving.
