Ingredients
(Adjust the amounts depending on how many you’re serving!)
- Mushrooms
- Peppers
- Baby marrows (zucchini)
- Carrots
- Snap peas
- Celery
- Spring onions
- Baby corn
- White onions
- Fresh thyme
- Slivered meat (leftover fillet works great!)
- Fresh coriander
- Cornflour (Maizena)
Instructions
- Chop your vegetables into your preferred sizes.
- Thin strips (julienne-style) or finely chopped pieces work well.
- Toss your meat slices in a mix of Cornflour (Maiziena), salt, and pepper. This adds a little crispness when you cook them.
- Heat your wok or large pan.
- Lightly fry the coated meat until warm and crisp, then set it aside.
- Add the veggies to the pan a handful at a time, frying them quickly so they’re cooked but still have some crunch. Once each batch is done, scoop them out and set aside.
- When all the veggies are done, throw everything, veggies and meat, back into the pan.
- Add a generous handful of freshly chopped coriander and toss everything together until it’s fragrant and ready to serve.
- Pile it high over a bed of steamed rice or toss it with some Chinese noodles. Add soy sauce on the side for extra flavor.
