Stuffed Chicken Breast with Spinach and Feta

Description

This stuffed chicken breast recipe with spinach and feta is a quick and delicious weeknight dinner. Juicy, cheesy, and packed with flavor, it’s an easy family favorite.


Ingredients

  • 5 large boneless, skinless chicken breasts
  • 1 package frozen spinach (thawed and well drained)
  • 1 small round feta cheese (crumbled)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp butter (for topping)

Instructions

  1. Slice each chicken breast in half lengthwise.
  2. Place between plastic wrap and pound thin with a mallet or rolling pin until about ¼ inch thick.
  3. Squeeze as much water as possible out of the thawed spinach.
  4. In a bowl, mix spinach with crumbled feta, garlic powder, onion powder, paprika, salt, and pepper.
  5. Divide the filling evenly between the chicken pieces.
  6. Roll each chicken breast tightly around the spinach and feta mixture.
  7. Place rolled chicken into a greased baking dish.
  8. Sprinkle with a little extra seasoning and top each piece with a small dab of butter.
  9. Bake at 360°F (180°C) for about 20 minutes, or until chicken is golden brown and cooked through.
  10. Let rest for 5 minutes before serving. Enjoy warm with your favorite sides.

Notes

  • Be sure to drain the spinach well — this keeps the filling creamy, not watery.
  • Onion powder adds amazing flavor, but feel free to use any seasonings you love.
  • Try serving with a fresh salad, roasted vegetables, or mashed cauliflower for a complete meal.
