5 large skinless, boneless chicken breasts
1 pkg frozen spinach
1 small round of feta cheese
Seasonings: garlic powder, onion powder, S&P, paprika, or whatever you fancy
Slice the chicken breasts in half lengthwise. Use a mallet (or in my case, my husband’s hammer wrapped in plastic wrap!) to flatten each piece out really well.
In the meantime, drain the spinach really well – get all the water out. In a bowl, combine the spinach and feta and season to taste. Whatever spices you like, I really recommend the onion powder – it makes a wonderful difference! And season it generously.
Split the stuffing up between the chicken pieces, and roll the chicken up around the stuffing. Place in an oven dish and season – I used all-purpose seasoning for this, which worked well. Dab a little butter on each one and bake at 360F until slightly browned – it only takes about 20 minutes or so.
I’ll certainly make this one again – it wasn’t overly complicated and tasted so good!
