- 500g bag of frozen spinach
- 8 medium potatoes
- 2 cups grated Cheddar cheese.
- 3/4 cup crumbled bacon
- 12 slices of inside round beef
- 1/2-1 cup barbecue sauce
- 1 tbsp dried onion flakes
- Salt and black pepper

Instructions
- Squeeze the spinach dry like you’re wringing out a dishcloth.
- Season with salt and pepper to wake it up.
- Boil the potatoes in water seasoned with garlic cloves (trust me, this makes magic).
- They’ll take about 15–20 minutes to get tender. Drain them well.
- Cut the potatoes into chunks. Don’t mash them, some texture is good!
- Toss in the cheese, bacon, onion flakes, and a sprinkle of salt and pepper. Stir to combine.
- Lay out your beef slices.
- Spread a thin layer of spinach over each slice.
- Top with the potato mixture, spreading it evenly but leaving some space at the edges. This makes rolling easier.
- Roll each slice tightly and secure it with toothpicks.
- Brush barbecue sauce generously over each roulade. Don’t skimp.
- Pop the rolls into a baking pan lightly coated with olive oil so nothing sticks.
- Bake in a preheated oven at 400°F (200°C) for 30–45 minutes.
- You’re looking for golden-brown deliciousness.
