Description

This Summer Salad goes big on color and crunch. No boring bowls here. With pepper dews, pimento olives, and mozzarella, every bite is bold. Fresh, fast, and surprisingly filling. Would you serve it at lunch or with a weekend braai?


Ingredients

  • Frilly lettuce
  • Sliced pineapple
  • Sliced English cucumber
  • Pepper dews (mild and tangy)
  • Sliced red onion
  • Grated mozzarella cheese
  • Sliced tomatoes
  • Sliced green pepper
  • Grated carrot
  • Green pimento olives
  • Fresh parsley, chopped

Instructions

  1. Prepare all the ingredients for the salad and place them in a pretty salad bowl.
  2. Mix up a basic vinaigrette (olive oil, vinegar, salt, pepper, and a touch of mustard or honey if you like), then drizzle it over the salad just before serving.
