- 4 large carrots, peeled and sliced
- 1 bunch of kale, chopped
- Salt and pepper to taste
- 3 tbsp margarine
- 1 tsp sugar
- Drizzle of apple cider vinegar
Instructions
- Melt 3 tbsp margarine in a large pan over high heat.
- Toss in 4 large carrots, peeled and sliced, along with a pinch of salt, pepper, and 1 tsp sugar.
- Let them sizzle and donβt be shy if they crisp or brown a bit, it adds flavor.
- Keep tossing until the carrots are soft with a little golden char.
- Turn off the heat, then stir in 1 bunch of chopped kale. Toss until wilted but still vibrant.
- Drizzle lightly with apple cider vinegar, just enough to balance the sweetness of the carrots and the slight bitterness of the kale.
- Taste and adjust salt and pepper if needed. Serve warm.
