Domes
- 200g Chocolate (enough for 6 domes), this will depend on the size of the domes and the thickness you prefer.
Filling
- 225g Original Kraft Philadelphia Cream Cheese (brick style)
- 1 tin (397g) caramel condensed milk
- 50ml concentrated bottled lemon juice
- 1 sachet (7g) unflavored gelatin
- 50ml water

Instructions
- Melt your favorite chocolate in the microwave at 30-second increments, mix until soft and smooth.
- Use silicone dome molds to form the domes and a flat round mold for the chocolate discs.
- Let the chocolate slightly set, it should not be dripping.
- Paint the inside of the dome with the chocolate (with a thick layer, you may even wish to add a double layer) and fill the disk molds with a layer of chocolate and let it set and harden in the fridge. If you’re short on time, a quick chill in the freezer works too.
- Combine the cream cheese, caramel condensed milk, and lemon juice in a large bowl.
- Beat the mixture with a handheld mixer. It might look lumpy at first but keep going until it’s silky smooth and thick.
- In a separate bowl, mix the gelatin with water and let it bloom. Then add it to the cream cheese mixture, blending well.
- Leave the chocolate domes in the mold and spoon in the creamy cheesecake filling.
- For a fun twist, add a maraschino cherry in the center of each dome before sealing it with filling. Smooth the tops with a knife.
- Spread a thin layer of melted chocolate around the edge of each chocolate disc.
- Place the disc chocolate-side down over the open side of the dome. Gently press to seal. Chill until set.
- Get creative! Drizzle with extra melted chocolate, sprinkle with crushed nuts, or add a touch of edible glitter.
