Description

No need to run to the store. These Vegan Wraps, Everything and Anything in the Fridge, are all about using what’s on hand. From cooked chickpeas to leftover veggies, turn almost anything into a fresh, filling wrap.


Ingredients

  • Spelt wraps (we used INDIAN Life Organic Spelt Wraps)
  • Hummus
  • Your favorite salad dressing (we love Simply Natural Organic Goddess Dressing)
  • Anything in your fridge or freezer!

What we used:

  • Cooked chickpeas
  • Raw chopped beets, carrots, zucchini, cucumber
  • Avocado
  • Frozen peas and corn (just rinse with hot water)
  • Kale
  • Lettuce

Other tasty add-ins we've tried:

  • Fried onion and garlic with tofu and soy sauce
  • Smoked tofu
  • Green onions
  • Tomatoes
  • Sweet peppers
  • Whatever’s lying around!

Instructions

  1. Chop or cook whatever ingredients you’re using.
  2. Toss everything in a bowl and mix with salad dressing.
  3. Lay a wrap flat, spread a thick layer of hummus.
  4. Pile on your filling, wrap it up tight, and dig in.
  5. These wraps are quick, filling, and you can’t mess them up.
  6. Use what you’ve got and make it yours.
