Ingredients

Burger Patties

Brioche Buns

  • 2-3 cups Bread Flour
  • 1/3 cup Cake Flour
  • 2 Teaspoons Yeast
  • 1 Teaspoon Salt
  • 2 Tablespoons Sugar
  • 1 Large Egg
  • 2 1/2 Tablespoons Butter
  • 3 Tablespoons Warm Milk
  • 1 cup Warm Water
  • 1 Egg (egg wash)
  • 1 cup Water (steam)

Instructions

Burger Patties

  1. Drain the beans and corn, then place them in a large bowl.
  2. Grate the sweet potato, onion, and zucchini, squeeze out the excess liquid, and add to the beans.
  3. Add in all the spices, flour, breadcrumbs, and seasonings and mash lightly with a fork then mix well to combine.
  4. Divide the mixture and shape into patties.
  5. Place on a baking sheet and refrigerate for about 30 minutes.
  6. Heat a thin layer of oil in a large pan and cook the patties. Assemble the burger and enjoy!!
  7. * I like the patties to have texture, so I used a fork to mash the beans lightly, but you could place all the ingredients in a food processor and blend till smooth*

Brioche Buns

  1. Whisk the water, milk, egg, yeast, and sugar together. Let it sit for 5 minutes. Add the flour, salt, and butter to the mixer bowl.
  2. Mix until it resembles crumbs.
  3. Pour in the liquid and mix for about 5 minutes.
  4. Turn out onto a surface and work the dough for about 5 minutes.
  5. Place in a lightly oiled bowl, cover with a damp dish towel, and place in a warm area to rise for about an hour or until doubled in size.
  6. Divide into 8 pieces, shape, and place on a baking sheet.
  7. Cover and allow it to rise for another hour. Just before baking, place a baking sheet on the bottom rack of the oven, and pour in the water to create steam.
  8. Brush the buns with egg, and bake in the oven at 180C/350F for 18–20 minutes.
  9. Remove from oven and cover with a dry dish towel until cooled. Enjoy!!
