Burger Patties
- 1 Can Red Kidney Beans
- 1/2 cup Corn
- 1 Onion
- 1 Zucchini
- 1/2 Sweet Potato
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Ground Ginger
- 1 Teaspoon Paprika
- 1 Teaspoon Dried Oregano
- Salt & Pepper to taste
- 1/2 cup Potato Flour/Tapioca Starch
- 1/2 cup Breadcrumbs
Brioche Buns
- 2-3 cups Bread Flour
- 1/3 cup Cake Flour
- 2 Teaspoons Yeast
- 1 Teaspoon Salt
- 2 Tablespoons Sugar
- 1 Large Egg
- 2 1/2 Tablespoons Butter
- 3 Tablespoons Warm Milk
- 1 cup Warm Water
- 1 Egg (egg wash)
- 1 cup Water (steam)
Instructions
Burger Patties
- Drain the beans and corn, then place them in a large bowl.
- Grate the sweet potato, onion, and zucchini, squeeze out the excess liquid, and add to the beans.
- Add in all the spices, flour, breadcrumbs, and seasonings and mash lightly with a fork then mix well to combine.
- Divide the mixture and shape into patties.
- Place on a baking sheet and refrigerate for about 30 minutes.
- Heat a thin layer of oil in a large pan and cook the patties. Assemble the burger and enjoy!!
- * I like the patties to have texture, so I used a fork to mash the beans lightly, but you could place all the ingredients in a food processor and blend till smooth*
Brioche Buns
- Whisk the water, milk, egg, yeast, and sugar together. Let it sit for 5 minutes. Add the flour, salt, and butter to the mixer bowl.
- Mix until it resembles crumbs.
- Pour in the liquid and mix for about 5 minutes.
- Turn out onto a surface and work the dough for about 5 minutes.
- Place in a lightly oiled bowl, cover with a damp dish towel, and place in a warm area to rise for about an hour or until doubled in size.
- Divide into 8 pieces, shape, and place on a baking sheet.
- Cover and allow it to rise for another hour. Just before baking, place a baking sheet on the bottom rack of the oven, and pour in the water to create steam.
- Brush the buns with egg, and bake in the oven at 180C/350F for 18–20 minutes.
- Remove from oven and cover with a dry dish towel until cooled. Enjoy!!
