Description

If you’re after a light, fresh, and slightly fancy salad that tastes like summer sunshine, this one’s for you. Sweet watermelon, juicy pineapple, strawberries, and creamy feta all come together with a squeeze of lime and a sprinkle of mint.


Ingredients

  • 2 handfuls spring mix
  • 3 cups watermelon, balls or cubes
  • 1 cup strawberries, halved
  • 1 cup pineapple, cubed
  • 1/2 cup feta, cubed or crumbled
  • Zest and juice of 1 lime
  • 1 tablespoon olive oil (optional)
  • 5 mint leaves, shredded
  • Pinch of sea salt, to taste

Instructions

  1. In a big bowl, toss spring mix, watermelon, strawberries, and pineapple together.
  2. Add feta, lime zest, and lime juice.
  3. Optional: Drizzle with olive oil and sprinkle a pinch of sea salt if your feta’s not too salty.
  4. Gently toss everything so it’s lightly coated but not mushy.
  5. Add shredded mint leaves just before serving for the freshest flavor.
  6. This simple tweak gives the salad a more balanced flavor and silky finish without losing its fresh, fruity punch.
