Description

Easy oven-roasted hake is ready in 20 minutes. Perfect for busy weeknights.


Ingredients

Scale
  • 4 whole baby hake, cleaned and butterflied
  • 1-2 tsp fish or meat spice rub (use more if you like it bold)
  • 2 cloves garlic, minced
  • 3 tbsp fresh parsley, chopped
  • 1/4 tsp red chili flakes (or more if you like heat)
  • 1/2 tsp paprika
  • 3 limes, sliced into thin rounds
  • 2-3 tsp olive oil (or enough to drizzle lightly)

Instructions

  1. Preheat oven to 190°C / 375°F.
  2. Rub the hake inside and out with the spice rub, garlic, parsley, chili flakes, and paprika.
  3. Lay lime slices over the fish and drizzle with olive oil.
  4. Place fish on a baking tray and bake in the middle of the oven for 15–20 minutes, or until the fish turns opaque and flakes easily with a fork.
  5. Serve warm with a fresh green salad and a side of potato salad.

Notes

  • This recipe used a Joostenberg Farms rub packed with mustard seeds, peppercorns, garlic salt, bay leaves, thyme, oregano, pimento, chili flakes, and Cajun spice. If you can’t find it, just mix a little paprika, garlic powder, dried thyme, and chili flakes for an easy substitute.
  • If your fish are on the larger side, you may need to cook them closer to 20–22 minutes.
