Description

You might not expect a simple bowl of lemons to turn into something this bold, but Zesty Lemon Chutney does it with almost no effort.


Ingredients

  • 7 ripe lemons, washed and pips removed
  • juice of 1/2 lemon
  • 1/2 tsp fine salt
  • 1/4 cup sugar
  • 1/4 tsp ginger and garlic paste
  • 2 tbsp pickle masala or methi masala, or a combo
  • 1/4 tsp cumin seeds
  • 1/4 tsp mustard seeds
  • 1/4 tsp fennel seeds
  • 4 tbsp oil
  • 1 tbsp vinegar

Instructions

  1. Toss 7 ripe lemons, the juice of 1/2 lemon, 1/2 tsp fine salt, 1/4 cup sugar, and 1 tbsp vinegar into a food processor. Blend until everything looks smooth and bright.
  2. Warm 4 tablespoons of oil in a small pan.
  3. Add 1/4 tsp cumin seeds, 1/4 tsp mustard seeds, and 1/4 tsp fennel seeds. Let them sizzle for a few seconds.
  4. Stir in 1/4 tsp ginger and garlic paste and fry it just long enough for the raw smell to fade.
  5. Take the pan off the heat and let the oil cool for a minute, so the spices don’t burn.
  6. Mix in 2 tbsp pickle masala until it forms a thick, fragrant paste.
  7. Pour the blended lemon mixture into a bowl and stir in the spiced oil mixture.
  8. Keep mixing until everything looks well combined.
  9. Spoon the chutney into a clean jar or a sterile container.
  10. You can enjoy it right away, but it gets even better after a few days as the flavors settle in.
