Ingredients
- 2 tsp gelatin
- 2 tbsp cold water
- ¼ cup boiling water
- ½ cup sugar
- ¼ cup cocoa powder
- 1½ cups cream
- ½ cup Amarula (keep it ice cold)
- 1 tsp vanilla
Instructions
- Start by sprinkling the gelatin over the cold water in a small bowl.
- Give it a quick stir and let it sit for a minute to bloom.
- Stir in the boiling water until the gelatin fully dissolves, no lumps allowed.
- In a mixing bowl, combine the sugar, cocoa powder, cream, and vanilla.
- Beat the mixture at medium speed until stiff peaks form.
- Slowly pour in the Amarula and the gelatin mixture while cranking up the mixer to high speed.
- Whip until the mousse is thick, fluffy, and irresistible.
- Pro tip: Tape a paper plate over your mixer beaters to dodge chocolate splatters on the kitchen walls.
- Spoon the mousse into small serving dishes, and place them into the fridge for about an hour or until they’re firm and ready to enjoy.
- Finish with your favorite garnish, shaved chocolate, whipped cream, or a drizzle of extra Amarula if you’re feeling fancy.
