Short Crust Pastry
- 0.75 cup (170 g) Butter (softened)
- 2 cups Flour
- 1/2 cup Sugar
- 1 Egg
- Pinch of Salt
- 1/2 Teaspoon Vanilla Extract
Filling
- 4-6 Apples (peeled, cored & cubed)
- 1/3 cup Sugar/Honey/Erythritol
- 1 Tablespoon Cinnamon
- 1/2 cup Water
Crumble
- 1/2 cup Sugar/Erythritol
- 8 Tablespoons Butter (softened)
- 1 cup Flour
- 1/2 cup Walnuts (chopped)

Instructions
Short Crust Pastry
- Cream the butter and sugar.
- Beat in the egg.
- Add the almond extract.
- Stir in the flour and salt.
- Knead till a soft dough forms.
- Wrap in cling and refrigerate for 10 minutes.
- Roll the dough out onto a lightly floured surface.
- Lay it into a greased baking dish.
- Bake it blind at 180C/350F for 15 minutes.
- Remove the baking beans and bake for a further 5 minutes.
- Remove from oven and allow it to cool completely.
Filling
- Place apples in a saucepan, pour in water, then sprinkle with sugar and cinnamon.
- Allow it to simmer until the apples are fork-tender.
- Remove from heat and allow cooling.
Crumble
- Mix sugar, nuts, and flour.
- Work the butter in with your fingertips until it resembles breadcrumbs.
- Spread the cooled apple mixture onto the pastry.
- Add the crumble mixture evenly over the top.
- Bake at 180C/350F for about 25–30 minutes.
- Once cool, dust with powdered sugar. Enjoy!!
