Ingredients

Short Crust Pastry

  • 0.75 cup (170 g) Butter (softened)
  • 2 cups Flour
  • 1/2 cup Sugar
  • 1 Egg
  • Pinch of Salt
  • 1/2 Teaspoon Vanilla Extract

Filling

Crumble

  • 1/2 cup Sugar/Erythritol
  • 8 Tablespoons Butter (softened)
  • 1 cup Flour
  • 1/2 cup Walnuts (chopped)


Instructions

Short Crust Pastry

  1. Cream the butter and sugar.
  2. Beat in the egg.
  3. Add the almond extract.
  4. Stir in the flour and salt.
  5. Knead till a soft dough forms.
  6. Wrap in cling and refrigerate for 10 minutes.
  7. Roll the dough out onto a lightly floured surface.
  8. Lay it into a greased baking dish.
  9. Bake it blind at 180C/350F for 15 minutes.
  10. Remove the baking beans and bake for a further 5 minutes.
  11. Remove from oven and allow it to cool completely.

Filling

  1. Place apples in a saucepan, pour in water, then sprinkle with sugar and cinnamon.
  2. Allow it to simmer until the apples are fork-tender.
  3. Remove from heat and allow cooling.

Crumble

  1. Mix sugar, nuts, and flour.
  2. Work the butter in with your fingertips until it resembles breadcrumbs.
  3. Spread the cooled apple mixture onto the pastry.
  4. Add the crumble mixture evenly over the top.
  5. Bake at 180C/350F for about 25–30 minutes.
  6. Once cool, dust with powdered sugar. Enjoy!!
