Artichoke Bacon and Kale with shaved Parmesan

Description

This dish is smoky, cheesy, and just the right amount of savory. The bacon and Parmesan do a happy dance with the tender artichokes and earthy kale. Perfect as a side or a main, your call.


Ingredients

  • 5 slices of bacon, chopped into bite-sized pieces
  • Half a medium onion, chopped
  • 1/2 teaspoon minced garlic (the pre-minced stuff works great!)
  • 1 1/2 teaspoons of Kraft Italian salad dressing
  • 1 can of artichokes, drained and halved
  • 1 bunch of black kale, stems removed and leaves torn into bite-sized pieces
  • Shaved Parmesan cheese (be generous!)


Instructions

  1. Heat a skillet over medium-high heat.
  2. Toss in the bacon, onion, garlic, and Italian dressing.
  3. Add a drizzle of olive oil.
  4. Let everything sizzle together for about 5 minutes, until the bacon’s crispy and the onions are golden.
  5. Stir in those artichokes and kale.
  6. Turn the heat down to medium, place a lid on the skillet, and let it all cook for about 5 minutes.
  7. The kale should be wilted and tender but still vibrant.
  8. Take off the lid, sprinkle a hearty handful of Parmesan on top, and give it a moment to melt into the mix.
  9. Serve it up warm with Baked Glazed Teriyaki Chicken Wings
