Description

Oven-baked Bacon and Boerewors Breakfast Pie combines bacon, boerewors, eggs, and vegetables in a cheesy, flaky pastry. Taste the savory layers today.


Ingredients

  • 6 large eggs
  • 1 1/2-2 cups fried boerewors pieces
  • 1 cup fried bacon pieces
  • 10 mushrooms, chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 tbsp garlic
  • 1 sheet thawed store-bought pastry
  • 1 cup grated cheese
  • Thyme & oregano
  • Salt & pepper
  • 1 tbsp olive oil

Instructions

  1. Heat 1 tbsp olive oil in a large pan and sauté 1 chopped onion until soft and lightly golden.
  2. Add the 10 chopped mushrooms and 1 chopped green pepper, and cook for about 5 minutes until they soften.
  3. Stir in the 1 cup fried bacon pieces, 1½–2 cups fried boerewors pieces, and 1 tbsp garlic.
  4. Let everything cook together for another 5–10 minutes so the flavors settle in.
  5. Remove from the heat to cool a bit; hot fillings can make your pastry soggy.
  6. Roll out your store-bought pastry on a floured counter.
  7. Press it into a pie dish or baking tray and poke a few holes with a fork, so the bottom doesn’t puff too much.
  8. Spoon the cooled boerewors-and-bacon filling into the pastry.
  9. Whisk 6 large eggs with salt, pepper, thyme, and oregano.
  10. Pour the mixture evenly over the filling.
  11. Sprinkle 1 cup of grated cheese on top, plus a little extra herbs if you like.
  12. Bake in a preheated oven at 375°F (190°C) for 20–30 minutes, or until the eggs are set and the pastry is golden and crisp.
  13. Let it rest for 5 minutes so it slices neatly.
  14. Great with a simple salad.
