Description

Tired of boring scrambled eggs? This cheesy egg roll-up is a fun twist, plus, it sneaks in some greens!


Ingredients

Scale
  • 2 cups baby spinach
  • 1 tbsp butter
  • 3 eggs
  • 50g mature white cheddar, grated

Optional

  • Epicure Roasted Garlic Aioli (for serving)
  • Epicure Chives & Onion Sea Salt (or your favorite spice mix)

Instructions

  1. Sauté the spinach in butter until wilted. Set it aside.
  2. Line a small baking tray with baking paper.
  3. Whisk the eggs, then pour them into the tray.
  4. Sprinkle on the cheese and seasoning.
  5. Bake at 180°C (350°F) for about 7 minutes, or until set.
  6. Take it out, layer the spinach on top, and gently roll it up.
  7. Slice and serve with a swipe of garlic aioli. It’s warm, cheesy, and way more fun than your usual breakfast and even a light lunch.
