Description

Eat these Baked Egg Bacon Potato Bowls while it’s hot! These are hearty, cheesy, and full of flavor. Perfect for breakfast, brunch, or a cozy dinner.


Ingredients

Scale
  • 4 large potatoes
  • 4 small scoops of margarine
  • 4 eggs
  • Cooked bacon (crumbled) or any cooked meat you have on hand
  • Shredded cheddar cheese
  • Chopped spring onions
  • Freshly ground black pepper

Instructions

  1. Cook the potatoes until just soft enough to cut and scoop. Don’t let them get mushy.
  2. Slice a flat opening on the top side of each potato.
  3. Leave a rim around the edge.
  4. Gently scoop out the inside of each potato with a spoon to create a bowl.
  5. Keep the potato you scoop out for something else, like mashed potatoes.
  6. Add a small scoop of margarine inside each potato bowl.
  7. Sprinkle in some cheese and your choice of meat.
  8. Crack an egg into each potato.
  9. Top with more cheese, chopped spring onions, and a little black pepper.
  10. Bake at 350–400°F for about 20–25 minutes, until the egg white is cooked through.
