Description
Eat these Baked Egg Bacon Potato Bowls while it’s hot! These are hearty, cheesy, and full of flavor. Perfect for breakfast, brunch, or a cozy dinner.

- 4 large potatoes
- 4 small scoops of margarine
- 4 eggs
- Cooked bacon (crumbled) or any cooked meat you have on hand
- Shredded cheddar cheese
- Chopped spring onions
- Freshly ground black pepper
Instructions
- Cook the potatoes until just soft enough to cut and scoop. Don’t let them get mushy.
- Slice a flat opening on the top side of each potato.
- Leave a rim around the edge.
- Gently scoop out the inside of each potato with a spoon to create a bowl.
- Keep the potato you scoop out for something else, like mashed potatoes.
- Add a small scoop of margarine inside each potato bowl.
- Sprinkle in some cheese and your choice of meat.
- Crack an egg into each potato.
- Top with more cheese, chopped spring onions, and a little black pepper.
- Bake at 350–400°F for about 20–25 minutes, until the egg white is cooked through.
