This delicious Oven-Baked Frittata is made with eggs, zucchini, and grated parmesan cheese. Fast and easy to make a perfect quick dinner or lunch.


Units Scale
  • 1 Large Zucchini (grated)
  • 1 Red Bell Pepper (diced)
  • 1 Yellow Bell Pepper (diced)
  • 1 Red Onion (diced)
  • 2 Tablespoons Oil/Butter
  • 1 Teaspoon Granulated Garlic
  • 1 Teaspoon Oregano
  • Salt & Pepper to taste
  • 1/3 cup Parmesan (grated)
  • 34 Eggs (beaten)


  1. Place the grated zucchini in a tea towel and squeeze out as much liquid as you can.
  2. Heat oil in a pan, then sautΓ© the vegetables until softened.
  3. Add all the seasonings as well as the cheese to the eggs and whisk well.
  4. Spoon the vegetables into an oven-proof baking dish, pour in the eggs, and bake at 180C / 350F for 8-10 minutes or until just set.
