- 1/2 cup Butter
- 1 1/2 cup Sugar
- 1 cup Sour Cream
- 2 Eggs
- 1 Teaspoon Baking Soda
- 2 Teaspoons vanilla Extract
- 1/2 Teaspoon Salt
- 2 cups Cake Flour
- 1 cup Bananas (mashed)
- 1/2 cup Walnuts (chopped)
Cream Cheese Frosting
- 250g Plain Cream Cheese
- 2–3 Tablespoons Milk
- 1/2 cup Icing Sugar
- 2 Tablespoons Ground Ginger
Instructions
Banana & Walnut Squares
- This recipe was made with a sugar substitute so please add more sugar if you need to.
- Beat the butter and sugar until light and fluffy.
- Whisk the eggs, vanilla, and sour cream together and add it in, mix to combine well.
- Add in the dry ingredients and mix until just combined.
- Stir in the mashed bananas and chopped walnuts.
- Pour into a greased baking pan and bake at 180C / 350F for 25-30 minutes.
- Allow to cool completely.
Cream Cheese Frosting
- Whisk all the ingredients together until smooth and silky. (If it’s too thick then add more milk).
- Spread the frosting over the cooled cake.
- If you love ginger, feel free to sprinkle extra ginger over.
- Cut into squares.
- Decorate as you desire and enjoy
