- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated white sugar
- 2 large eggs
- 3 medium very ripe bananas
- 1/4 cup milk
- 1 tsp vanilla essence
- 2 cups self-raising flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup raisins or sultanas
Instructions
- Preheat the oven to 350F (180C) and place the rack in the bottom third.
- Spray an 8×5-inch loaf pan lightly with nonstick spray.
- Melt the butter in the microwave until soft, then cream it with 1 cup granulated sugar until fluffy.
- Beat in the eggs, one at a time, until smooth.
- Mix in 1/4 cup milk and 1 tsp vanilla essence to the butter mixture.
- Mash the bananas (3 medium, very ripe bananas) in a separate bowl with a fork until mostly smooth but still slightly chunky.
- Combine dry ingredients: 2 cups self-raising flour, 1 tsp baking soda, and 1/2 tsp salt.
- Gently stir into the wet mixture. Fold in the mashed bananas and 1/2 cup raisins. Donβt overmix.Β
- Pour batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55β65 minutes, until the top is caramelized and a skewer inserted in the center comes out clean.
- Keep an eye on the last 10 minutes, be careful not to overbake.
- Cool in the pan for 10β15 minutes before transferring to a wire rack.
- Slice and enjoy!
