Description

Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated white sugar
  • 2 large eggs
  • 3 medium very ripe bananas
  • 1/4 cup milk
  • 1 tsp vanilla essence
  • 2 cups self-raising flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup raisins or sultanas

Instructions

  1. Preheat the oven to 350F (180C) and place the rack in the bottom third.
  2. Spray an 8×5-inch loaf pan lightly with nonstick spray.
  3. Melt the butter in the microwave until soft, then cream it with 1 cup granulated sugar until fluffy.
  4. Beat in the eggs, one at a time, until smooth.
  5. Mix in 1/4 cup milk and 1 tsp vanilla essence to the butter mixture.
  6. Mash the bananas (3 medium, very ripe bananas) in a separate bowl with a fork until mostly smooth but still slightly chunky.
  7. Combine dry ingredients: 2 cups self-raising flour, 1 tsp baking soda, and 1/2 tsp salt.
  8. Gently stir into the wet mixture. Fold in the mashed bananas and 1/2 cup raisins. Don’t overmix.Β 
  9. Pour batter into the prepared loaf pan and smooth the top with a spatula.
  10. Bake for 55–65 minutes, until the top is caramelized and a skewer inserted in the center comes out clean.
  11. Keep an eye on the last 10 minutes, be careful not to overbake.
  12. Cool in the pan for 10–15 minutes before transferring to a wire rack.
  13. Slice and enjoy!
