Banana Bread with Raisins, what do you need more for your next tea or coffee break? I am sure you will enjoy it
1/2 cup (1 stick ) unsalted butter, softened
1 cup granulated white sugar
2 large eggs
3 medium Banana, very ripe
1/4 cup milk
1 tsp vanilla essence
2 cups self-raising flour
1 tsp baking soda
1/2 tsp salt
1/2 cup raisins or sultanas (optional)
8×5 loaf pan
Whisk or fork or stand mixer
Heat the oven and prepare the pan: preheat to 350F (180C) with the oven rack in the bottom third oven, spray the inside of the pan with nonstick spray.
Melt butter in the microwave and creme with sugar until fluffy using a stand mixer, add eggs one a time beating well.
Add milk and vanilla into the butter mixture.
Mash the banana using a fork separately in a bowl
Combine flour, baking soda, and salt gently stir and add to dry ingredients, add banana and fold in the raisins. Mix well until combined.
Pour the batter into the prepared pan smooth the top of the batter.
Bake for 55-65 minutes until it caramelized and dark brown in color and skewer comes out clean when inserted at the center of the bread.
