Description
Banana Cake with Peanut Butter Frosting is a huge crowd-pleaser and better than any store-bought cake and will be gobbled up in record time.

- 3–4 Ripe Bananas
- 2 Large Eggs
- 1/2 cup Sour Cream
- 2 cups Self Rising Flour
- 1 tsp. Baking Soda
- 1/2 cup Vegetable Oil
- 1/2 cup Sugar
- 1/2 tsp. Salt
- 1 tsp. Vanilla Extract
Peanut Butter Frosting
- 1 Package Plain Cream Cheese
- 1/2 cup Creamy Peanut Butter
- 1/2 tsp Vanilla Extract
- 2 Tbsp. Powdered Sugar
- 1 Ripe Banana
- Chopped Pecan Nuts
Instructions
- Add the bananas, sugar, and sour cream to the processor.
- Process till creamy.
- Pour in the oil & vanilla and add the eggs one at a time while the machine is running.
- Blend well.
- Add in the sifted flour and baking soda.
- Process until a smooth batter forms.
- Pour into 2 greased baking pans and bake at 180C/350F for about 30-40 minutes.
- Test with a skewer.
- Allow cooling completely.
Peanut Butter Frosting
- Cream the cheese, banana, and peanut butter together till smooth.
- Add in the sugar and vanilla.
- Beat until creamy.
- Sandwich the cakes with the frosting and sprinkle chopped pecans on top.
- Serve and enjoy!!
