Ingredients

Units Scale
  • 34 Ripe Bananas
  • 2 Large Eggs
  • 1/2 cup Sour Cream
  • 2 cups Self Rising Flour
  • 1 tsp. Baking Soda
  • 1/2 cup Vegetable Oil
  • 1/2 cup Sugar
  • 1/2 tsp. Salt
  • 1 tsp. Vanilla Extract

Peanut Butter Frosting

  • 1 Package Plain Cream Cheese
  • 1/2 cup Creamy Peanut Butter
  • 1/2 tsp Vanilla Extract
  • 2 Tbsp. Powdered Sugar
  • 1 Ripe Banana
  • Chopped Pecan Nuts

Instructions

  1. Add the bananas, sugar, and sour cream to the processor.
  2. Process till creamy.
  3. Pour in the oil & vanilla and add the eggs one at a time while the machine is running.
  4. Blend well.
  5. Add in the sifted flour and baking soda.
  6. Process until a smooth batter forms.
  7. Pour into 2 greased baking pans and bake at 180C/350F for about 30-40 minutes.
  8. Test with a skewer.
  9. Allow cooling completely.

Peanut Butter Frosting

  1. Cream the cheese, banana, and peanut butter together till smooth.
  2. Add in the sugar and vanilla.
  3. Beat until creamy.
  4. Sandwich the cakes with the frosting and sprinkle chopped pecans on top.
  5. Serve and enjoy!!
