Banana Kebabs/Koftas

  • 45 green bananas or plantains
  • 1 teaspoon grated ginger
  • 1 teaspoon grated garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon chopped thyme
  • 2 tablespoons chickpea flour
  • Salt and pepper to taste
  • 1/3 cup peanut sauce
  • Coconut milk (to thin out the sauce)

Banana Kebabs Koftas

Peanut Satay Sauce

  • 2 cloves garlic (grated)
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sambal oelek (chili paste) or 1 finely chopped red chili
  • 1 teaspoon dried chili flakes
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • 1/3 cup peanut butter
  • 1 can of coconut milk
  • 1 lime (juiced)
  • 2 tablespoons neutral-flavored oil
  • 1 tablespoon sesame oil (to finish)
  • Salt to taste

Instructions

Banana Kebabs/Koftas

  1. Pop the green bananas into a big pot of water and bring it to a boil.
  2. Cook them until they’re fork-tender. Drain and let them cool just enough to handle.
  3. Peel the bananas and grate them into a bowl.
  4. Toss in the ginger, garlic, cumin, thyme, chickpea flour, salt, and pepper.
  5. Mix until it all comes together.
  6. Grab a spoonful of the mixture and roll it into a ball.
  7. Repeat until you’ve used up all the mix.
  8. Heat a thin layer of oil in a pan.
  9. Brown the banana balls on all sides until they’re golden and crisp. Set aside.
  10. Warm the peanut sauce in a small saucepan.
  11. Slowly add coconut milk, stirring until you reach the perfect creamy consistency.
  12. Add the banana kebabs to the sauce and let them simmer briefly.
  13. Plate them up on a bed of whole-wheat spaghetti or your favorite pasta. Dig in and enjoy!

Pro Tip: No coconut milk? No problem. Use any milk you have on hand!

Peanut Satay Sauce

  1. Heat neutral oil in a pan over medium heat.
  2. Sauté the ginger and garlic for a few seconds until fragrant.
  3. In a jug, whisk together honey, soy sauce, peanut butter, coconut milk, and sambal or chili until smooth.
  4. Pour the sauce mixture into the pan.
  5. Stir over medium heat until it’s creamy and velvety.
  6. Stir in sesame oil, chili flakes, and lime juice.
  7. Add salt to taste. Remove from heat.
