Banana Kebabs/Koftas
- 4–5 green bananas or plantains
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 1 teaspoon cumin powder
- 1 teaspoon chopped thyme
- 2 tablespoons chickpea flour
- Salt and pepper to taste
- 1/3 cup peanut sauce
- Coconut milk (to thin out the sauce)
Peanut Satay Sauce
- 2 cloves garlic (grated)
- 1 teaspoon freshly grated ginger
- 1 tablespoon sambal oelek (chili paste) or 1 finely chopped red chili
- 1 teaspoon dried chili flakes
- 1 tablespoon honey
- 2 tablespoons soy sauce
- 1/3 cup peanut butter
- 1 can of coconut milk
- 1 lime (juiced)
- 2 tablespoons neutral-flavored oil
- 1 tablespoon sesame oil (to finish)
- Salt to taste
Instructions
Banana Kebabs/Koftas
- Pop the green bananas into a big pot of water and bring it to a boil.
- Cook them until they’re fork-tender. Drain and let them cool just enough to handle.
- Peel the bananas and grate them into a bowl.
- Toss in the ginger, garlic, cumin, thyme, chickpea flour, salt, and pepper.
- Mix until it all comes together.
- Grab a spoonful of the mixture and roll it into a ball.
- Repeat until you’ve used up all the mix.
- Heat a thin layer of oil in a pan.
