Description
These banana oat flapjacks come together with pantry basics and make breakfast feel a little more special without much effort. Theyβre soft in the middle, lightly crisp on the edges, and really good with a drizzle of honey and fresh fruit.
Ingredients
Units
Scale
- 1 ripe banana
- 1/2 cup oats
- 1 egg
- 2 Tbsp Self-Raising flour (optional for a firmer dough)
- 1 to 2 tsp olive oil, for frying
- Honey, for serving
- Fresh fruit, for serving
Instructions
- Add 1 ripe banana, 1/2 cup oats, and 1 egg to a blender.
- Blitz until mostly smooth. A few bits of oats left behind actually give the flapjacks a better texture, but you decide how you want yours.
- Pour the mixture into a bowl and stir in 2 Tbsp Self-Raising flour (if using).
- Let the batter sit for 2 minutes so the oats can absorb a little moisture. If the batter feels too thick, add 1 Tbsp milk.
- Heat 1 tsp olive oil in a non-stick pan over medium heat.
- Donβt let the pan get too hot, or the banana can brown too quickly before the middle cooks through.
- Spoon small portions of batter into the pan and gently flatten slightly with the back of the spoon.
- Cook for about 2 to 3 minutes per side until lightly browned and cooked through.
- Add more olive oil if needed for the second batch.
- Serve warm with honey and fresh fruit.
- Theyβre especially good with berries, sliced banana, or even a spoonful of yogurt on the side.
