Description

These banana oat flapjacks come together with pantry basics and make breakfast feel a little more special without much effort. They’re soft in the middle, lightly crisp on the edges, and really good with a drizzle of honey and fresh fruit.


Ingredients

  • 1 ripe banana
  • 1/2 cup oats
  • 1 egg
  • 2 Tbsp Self-Raising flour (optional for a firmer dough)
  • 1 to 2 tsp olive oil, for frying
  • Honey, for serving
  • Fresh fruit, for serving

Instructions

  1. Add 1 ripe banana, 1/2 cup oats, and 1 egg to a blender.
  2. Blitz until mostly smooth. A few bits of oats left behind actually give the flapjacks a better texture, but you decide how you want yours.
  3. Pour the mixture into a bowl and stir in 2 Tbsp Self-Raising flour (if using).
  4. Let the batter sit for 2 minutes so the oats can absorb a little moisture. If the batter feels too thick, add 1 Tbsp milk.
  5. Heat 1 tsp olive oil in a non-stick pan over medium heat.
  6. Don’t let the pan get too hot, or the banana can brown too quickly before the middle cooks through.
  7. Spoon small portions of batter into the pan and gently flatten slightly with the back of the spoon.
  8. Cook for about 2 to 3 minutes per side until lightly browned and cooked through.
  9. Add more olive oil if needed for the second batch.
  10. Serve warm with honey and fresh fruit.
  11. They’re especially good with berries, sliced banana, or even a spoonful of yogurt on the side.
