Instructions

  1. Preheat your oven to 325F. Grease your pan generously with spray or butter. I baked mine in a ring pan this time, as it makes slicing easier and gives a fun shape.
  2. If your bananas aren’t super ripe, microwave 3 Bananas for about 40 seconds to soften them.
  3. Mash in a small bowl and sprinkle over 1 heaped teaspoon of Baking Soda. Set aside.
  4. In a separate bowl, cream together 55g Margarine, 1 cup White Sugar, 1 large Egg, and 5ml Vanilla Extract with an electric mixer until light and pale.
  5. Mix in the mashed bananas. Beat again until fully combined.
  6. Gently fold in 1½ cups Self-Raising Flour and a pinch of Salt using a spoon.
  7. Mix until no flour streaks remain, be careful not to overdo it.
  8. Pour the batter into your greased pan.
  9. If using a ring pan, sprinkle ½–¾ cup of Slivered Almonds on the bottom before adding the batter, so the almonds sit on top after baking.
  10. Bake for 50–60 minutes.
  11. Test with a skewer in the center; it should come out clean.
  12. Let cool slightly before removing from the pan. Slice and serve!
