Ingredients

  • 6 slices scotch fillet, cut into slivers against the grain
  • 2 tbsp olive oil
  • 1 yellow pepper, sliced
  • 1 red pepper, sliced
  • 3 cloves garlic, minced
  • 1 punnet mushrooms, wiped and sliced
  • 1 small punnet of green beans, washed and cut
  • A handful of fresh basil, roughly chopped
  • 2 chopped chilies (add more if you like it hotter)
  • 1 tbsp fish sauce (taste for saltiness, add more if needed)
  • 1/2 cup oyster sauce (adjust if you like more sauce)
  • Egg noodles, cooked as per packet instructions

Instructions

  1. Heat a wok over high heat and pour in 2 tbsp olive oil.
  2. Add 6 slices of scotch fillet, 2 chopped chilies, and 3 cloves of minced garlic.
  3. Stir fry for about 3 mins, then season with half of the 1/2 cup of oyster sauce and 1 tbsp fish sauce. Once cooked, remove the beef from the wok and set aside.
  4. In the same wok, add 1 yellow pepper sliced, 1 red pepper sliced, 1 punnet mushrooms sliced, and 1 small punnet green beans cut.
  5. Pour in the remaining oyster sauce and fish sauce.
  6. Stir fry for 3–4 mins until veggies are just tender but still have a crunch.
  7. Toss the beef back into the wok along with a handful of fresh basil, roughly chopped.
  8. Give it all a quick toss, so the flavors combine beautifully.
  9. Serve hot over the cooked egg noodles or your choice of rice.

Tips:

  1. Don’t overcook the beef; keep it slightly pink for tenderness.
  2. Adjust chili quantity to your spice comfort level.
  3. You can add a splash of soy sauce or a pinch of sugar if you like a slight sweetness.
