Ingredients

Units Scale
  • 500g Beef shin (cut into bite-sized pieces)
  • 1 tsp Ground Ginger & Garlic
  • 1 tsp Garam Masala
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 Large Onion (chopped)
  • Masala (pick your heat level!)
  • A splash of Oil (don’t skimp on this)
  • Salt to taste
  • Optional: Peas (because why not?)
  • Water (just enough to keep things saucy)
  • Optional: Potatoes (cut small so they cook through)

Beef Curry Pies


Instructions

  1. Start by cutting up your beef into bite-sized pieces. It doesn’t need to be perfect, just make sure it’s not too big. You don’t want to struggle with giant chunks in your pie.
  2. Heat some oil in a pot, just enough to coat the bottom.
  3. Drop in your chopped onion and let it cook down until it’s soft and golden.
  4. Then, toss in the ginger, garlic, garam masala, coriander, cumin, and whatever heat level of masala you like. Let that cook for a couple of minutes so the flavors can mingle.
  5. Add your chunks of beef, season with salt, and pour in about ½ cup of water.
  6. You don’t want to drown it, just enough to keep things from sticking.
  7. Cover and let it simmer on medium heat.
  8. Keep adding water bit by bit if it’s looking dry, but you want it to cook slowly and get tender, not a rushed process here.
  9. Once your beef is melt-in-your-mouth tender, throw in the peas and potatoes (if you’re using them).
  10. Add a little more water if needed to make sure everything’s got enough liquid to cook.
  11. Let it all bubble away until the potatoes are soft and ready to go.
  12. Let the curry cool down completely. I know, the wait is hard, but trust me, you don’t want to try and put hot curry in your pastry. It’ll ruin everything. Let it chill out for a bit.
  13. When it’s all cooled down, it’s time to stuff your pastry. Fill it with the curry, seal it up, and bake until the pastry is golden and crisp.
  14. Pro tip: don’t be afraid to make them a little messy. Flaky pastry means deliciousness.
  15. And that’s it! Serve it with some crispy chips on the side, and you’ve got yourself the kind of comfort food you’ll crave for days. Once you try this, it’ll be hard not to make it every week.
