Beef Rib Roast

TRH Alwyn's Mother's Day Roast

Beef Rib Roast, prepared by my husband for me on Mother’s Day and served with broccolini, rice and delicious sauce from the meat

Ingredients

1.25kg beef rib roast
Fresh garlic – store-bought
Spices of your preference
1 large portabella mushroom

Method

Place rib in a roasting dish.
Rub liberally with crushed garlic, or store-bought
Spice well with any spices of your own choice
Roast at 350F for approximately 1 hour
After an hour, slice mushroom into 4 thick slices
Add and bake for another ½ hour

Serve with steamed broccolini and rice
