Description

Ingredients

  • 1 cup cornmeal (remove 1 tablespoon)
  • 1 tablespoon baking powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 1/2 cups grated cheese (mix of cheddar and mozzarella works great)
  • 1 onion, finely chopped
  • 2 eggs
  • 1 can (341mL) regular corn
  • 1 tablespoon whipping cream
  • 1/4 cup milk (add a bit more if the batter feels too thick)

Optional add-ins: chopped green pepper, jalapeños, or green onions if you have them.


Instructions

  1. Set your oven to 350°F (175°C).
  2. In a big bowl, mix the cornmeal, flour, and baking powder.
  3. Toss in the chopped onion and grated cheese.
  4. Crack in the eggs, pour in the corn (juice and all), the cream, and some milk.
  5. Stir it all together. Add a splash more milk if it feels too stiff; you’re aiming for a thick, spoonable batter.
  6. Want an extra kick? Sprinkle chili powder on top before baking.
  7. Pour the mix into a 9″ x 11″ baking dish.
  8. Bake for about 1 hour, or until a toothpick poked into the middle comes out clean.

Best served warm with butter, thick gravy, or a hearty bowl of chili.
