Description

- 250g Butter
- 3 Tbsp. Cayenne Pepper
- 2 tsp. Paprika
- 1 tsp. Garlic Powder
- 2 tsp. Brown Sugar
- Salt & Pepper to taste
Brioche Buns
- 2–3 cups Bread Flour
- 1/3 cup Cake Flour
- 2 tsp. Yeast
- 1 tsp. Salt
- 2 Tbsp. Sugar
- 1 Large Egg (beaten)
- 2 1/2 tsp. Butter
- 3 Tbsp. Warm Milk
- 1 cup Warm Water
- 1 Egg (egg wash)
- 1 cup Water (steam)
Instructions
Nashville Hot Butter Sauce
- Melt the butter in a saucepan and add the cayenne, brown sugar, paprika, garlic powder, salt, and pepper.
- Heat and stir until all the ingredients are combined.
- Spoon the sauce while still warm over the fried chicken.
Brioche Buns
- Whisk the water, milk, egg, yeast, and sugar together.
- Let it sit for 5 minutes.
- Add the flour, salt, and butter to the bowl of the mixer.
- Mix until it resembles crumbs.
- Pour in the liquid and mix for about 5 minutes.
- Turn out onto a surface and work the dough for about 5 minutes.
- Place in a lightly oiled bowl, cover with a damp dish towel, and place in a warm area to rise for about an hour or until doubled in size.
- Divide into 8 pieces, shape, and place on a baking sheet.
- Cover and allow it to rise for another hour.
- Just before baking, place a baking sheet on the bottom rack of the oven, and pour in the water to create steam.
- Brush the buns with egg, and bake in the oven at 180C / 350F for 18-20 minutes.
- Remove from the oven and cover with a dry dish towel until cooled.
- Enjoy!!
