Description

A soulful meal for the modern table.  Try this most delicious Cauliflower and Chickpea Korma served with Naan.


Ingredients

Cauliflower and Chickpea Korma

  • 3 Tablespoons Oil
  • 34 Tablespoons Korma Paste
  • 1 Cauliflower (chopped)
  • 1 Can Chickpeas (drained)
  • 23 Tablespoons Plain Yogurt
  • Chopped Coriander (garnish)
  • Salt to taste
  • About 1/3 Cup Water (to thin the sauce out)

Naan Bread

  • 22 1/2 Cups Flour
  • 1 tablespoon of Oil
  • 1 Teaspoon of Salt
  • 1/2 cup of Warm Water
  • 1 Teaspoon of Sugar
  • 1 Package of Yeast
  • 1/2 cup Milk

Instructions

Cauliflower and Chickpea Korma

  1. Heat oil in a pan.
  2. Add in the paste and cook out for about 5 minutes.
  3. Add in the cauliflower florets, salt, and water, and cook till tender.
  4. Lastly, add the chickpeas and allow it to cook for 5 minutes more.
  5. Once thickened, remove from heat.
  6. Garnish with coriander and spoonfuls of yogurt.
  7. Serve warm and enjoy!!

Naan Bread

  1. Mix the yeast and sugar into the warm water.
  2. Allow it to sit for about 10 minutes until it foams.
  3. Mix flour and salt.
  4. Pour in the yeast mixture, oil, and milk.
  5. Stir well until a soft dough is formed.
  6. Turn out onto a lightly floured surface and knead for 10 minutes.
  7. Place in an oiled bowl and cover.
  8. Allow the dough to rise in a warm spot for an hour.
  9. Once risen, divide into smaller pieces and roll out.
  10. Cook on a hot pan brushing either side with melted butter.
