Cheddar and Spinach Biscuits

Description

Ready for Cheddar and Spinach Biscuits that mix cheesy flavor with hidden greens


Ingredients

Units Scale
  • 3 1/2 cups flour
  • 3 tsp baking powder
  • Salt (just a bit)
  • 1 tsp onion powder
  • 125 ml melted margarine
  • 1 tsp crushed garlic (store-bought works fine)
  • 2 cups grated cheese
  • 2 1/4 cups vanilla soy milk
  • 1/2 cup frozen shredded spinach (cooked and drained; leftovers are perfect)

Topping

  • 80 ml of margarine and mix in a bit of parsley and garlic powder

Instructions

  1. Heat your oven to 375°F (180°C).
  2. In a large bowl, mix all the dry ingredients (flour, baking powder, salt, onion powder).
  3. Add the melted margarine, garlic, cheese, soy milk, and cooked spinach.
  4. Stir everything until it’s all combined.
  5. Scoop out about ¼ to ½ cup of batter per biscuit and drop onto a baking sheet lined with parchment paper.
  6. Bake for about 20 minutes. Stick a toothpick in and check if they’re done; if it comes out clean, you’re good.
  7. Turn on the broiler and let the tops brown; just keep an eye on them so they don’t burn.
  8. While they finish up, melt about 80 ml of margarine and mix in a bit of parsley and garlic powder (or anything else you like).
  9. Brush the biscuits with this butter mix as soon as they come out of the oven.

Why you’ll want to make these:

They’re cheesy, warm, and packed with flavor. The spinach adds a little something extra (plus, no waste if it’s leftover). Perfect with soup, eggs, or just straight off the pan.
