- 100g Dry Red Chilies
- 1 Large Onion
- 8–10 Cloves of Garlic
- 1 Tablespoon Thyme
- 2 Tablespoons Oil
- Salt to taste
Instructions
Sauce
- Soak chilies in cold water for about an hour.
- Drain, then place the chilies with the remaining ingredients into a blender and blend until it has broken down but still has a little texture.
- Pour the mixture into a saucepan and heat on low for about 10 minutes.
- Remove from heat and allow it to cool completely. Pour into a jar and enjoy!!
Chicken
4-6 Chicken Thighs
- Place chicken into a resealable bag, pour in the sauce, then allow it to marinate for about an hour in the refrigerator.
- Remove from sauce and grill in a cast iron skillet or on the braai/BBQ.
- Use the remaining sauce to baste the chicken while cooking.
