Ingredients

Units Scale
  • 100g Dry Red Chilies
  • 1 Large Onion
  • 810 Cloves of Garlic
  • 1 Tablespoon Thyme
  • 2 Tablespoons Oil
  • Salt to taste

Instructions

Sauce

  1. Soak chilies in cold water for about an hour.
  2. Drain, then place the chilies with the remaining ingredients into a blender and blend until it has broken down but still has a little texture.
  3. Pour the mixture into a saucepan and heat on low for about 10 minutes.
  4. Remove from heat and allow it to cool completely. Pour into a jar and enjoy!!

Chicken

4-6 Chicken Thighs

  1. Place chicken into a resealable bag, pour in the sauce, then allow it to marinate for about an hour in the refrigerator.
  2. Remove from sauce and grill in a cast iron skillet or on the braai/BBQ.
  3. Use the remaining sauce to baste the chicken while cooking.
  4. * Served with butternut and rosemary & garlic purple potatoes *
