Cinnamon Chip Banana Coffee Cake with warm spice and melty chips baked right in
Ingredients

- 1 cup cinnamon chips (or swap in butterscotch or chocolate chips)
- 2/3 cup packed light brown sugar
- 3/4 cup chopped pecans or walnuts
- 1 tablespoon ground cinnamon
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup white sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- About 4 mashed ripe bananas
- 3 tablespoons buttermilk
Instructions
- Heat your oven to 350°F (180°C).
- Grease and flour an 8×8-inch pan.
- In a small bowl, mix the chips, brown sugar, nuts, and cinnamon.
- This is your crunchy topping; set it aside.
- In another bowl, stir together the flour, baking soda, baking powder, and salt.
- In a large bowl, beat the white sugar, softened butter, and egg until light and fluffy.
- Mix in the mashed bananas and buttermilk until smooth.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Spread half of the batter into the pan. Sprinkle on half the cinnamon-nut topping.
- Add the rest of the batter, then top with the remaining streusel.
- Bake for about 45 minutes, or until a toothpick comes out clean.
- Let it cool in the pan before slicing.
