Cinnamon Chip Banana Coffee Cake with warm spice and melty chips baked right in

Instructions

  1. Heat your oven to 350°F (180°C).
  2. Grease and flour an 8×8-inch pan.
  3. In a small bowl, mix the chips, brown sugar, nuts, and cinnamon.
  4. This is your crunchy topping; set it aside.
  5. In another bowl, stir together the flour, baking soda, baking powder, and salt.
  6. In a large bowl, beat the white sugar, softened butter, and egg until light and fluffy.
  7. Mix in the mashed bananas and buttermilk until smooth.
  8. Add the dry ingredients to the wet mixture and stir until just combined.
  9. Spread half of the batter into the pan. Sprinkle on half the cinnamon-nut topping.
  10. Add the rest of the batter, then top with the remaining streusel.
  11. Bake for about 45 minutes, or until a toothpick comes out clean.
  12. Let it cool in the pan before slicing.
