Ingredients

  • 1 1/2 cup Flour
  • 1 cup Sugar/ Sugar Alternative
  • 1/2 Teaspoon Salt
  • 2 Teaspoon Baking Powder
  • 1/4 cup Coconut Oil (melted but room temp.)
  • 1 Large Egg
  • 1/2 cup Coconut Milk
  • 1 Teaspoon Vanilla Extract
  • 1 cup Unsweetened Shredded Coconut
  • 1/2 cup Cashew Nuts (roughly chopped)

Instructions

  1. Mix together the dry ingredients.
  2. In a separate bowl, whisk together the wet ingredients.
  3. I toasted half the coconut and cashews in a dry pan, allowed it to cool off then I added it to the batter.
  4. Add the wet ingredients to the dry ingredients (including the coconut and cashews) and mix gently until just combined.
  5. The batter will be thick.
  6. Spoon mixture into the muffin pans and bake at 180C / 375F for 15-20 minutes.
  7. Allow it to cool on a rack.
  8. Serve and enjoy!!
