Ingredients
- 1 1/2 cup Flour
- 1 cup Sugar/ Sugar Alternative
- 1/2 Teaspoon Salt
- 2 Teaspoon Baking Powder
- 1/4 cup Coconut Oil (melted but room temp.)
- 1 Large Egg
- 1/2 cup Coconut Milk
- 1 Teaspoon Vanilla Extract
- 1 cup Unsweetened Shredded Coconut
- 1/2 cup Cashew Nuts (roughly chopped)
Instructions
- Mix together the dry ingredients.
- In a separate bowl, whisk together the wet ingredients.
- I toasted half the coconut and cashews in a dry pan, allowed it to cool off then I added it to the batter.
- Add the wet ingredients to the dry ingredients (including the coconut and cashews) and mix gently until just combined.
- The batter will be thick.
- Spoon mixture into the muffin pans and bake at 180C / 375F for 15-20 minutes.
- Allow it to cool on a rack.
- Serve and enjoy!!
