Cottage Pie
- 500g Ground Beef
- 1 Large Onion
- 1 Package of Peppers (red, yellow, and green)
- 1 Punnet Mushrooms (250g)
- 2-3 Tablespoons Tomato Paste
- 2 Teaspoons Ground Ginger & Garlic
- 2 Teaspoons Dried Thyme
- 2 Teaspoons Paprika
- a dash of Salt to taste
- a dash of Pepper to taste
- 1 cup Water
Garlic Parmesan Mash
- 4-5 Large Potatoes
- 2 Spring Onions
- 50g Butter
- 1/2 cup Grated Parmesan
- Salt & Pepper to taste
- 2 Teaspoons Dried Thyme
- 2 Teaspoons Garlic Powder
Instructions
- Brown the beef in a pan with ginger and garlic.
- Add in the chopped vegetables and cook until soft.
- Add the seasonings and tomato paste, thinned out with the water.
- Cook until rich in color and the mixture has thickened.
- Cut the potatoes into small pieces and add to salted water.
- Boil till soft. Drain and mash until smooth.
- Add in the remaining ingredients and mix well.
- Spoon the mince into a baking dish.
- Top with the mash.
- Place under the grill until the cheese is melted and bubbly on top.
- Serve and enjoy!
