Description
What better way to celebrate World Chocolate Day than with a batch of freshly baked chocolate chip & white chocolate and cranberry cookies.
Ingredients

- 250g Butter (softened)
- 100g Erythritol/Sugar
- 350g Flour (sifted)
- Pinch of Salt
- ± 80 g Chocolate Pieces/Chips
- ± 80 g Dried Cranberries (soak & drain)
Instructions
- Add butter, salt, and erythritol to a mixing bowl and whisk together till fluffy.
- Add in flour and mix till the mixture resembles sand.
- Turn out onto a work surface, add chocolate pieces/chips & cranberries, and bring them together gently to form a dough.
- Wrap in cling wrap and chill in the fridge for 40-50 minutes.
- Remove from fridge, cut out circles then place on a baking sheet and bake at 180 for about 25-30 minutes or until browned.
- Enjoy!!
- * Wrap dough in clingfilm and freeze. Thaw in refrigerator before slicing and baking
