Chocolate chip cookies

A chocolate chip cookie is a drop cookie with chocolate chips or morsels as its distinguishing ingredient. Chocolate chip cookies originated in the United States around 1938 when Ruth Graves Wakefield chopped up a Nestlé semi-sweet chocolate bar and added the chopped chocolate to a cookie recipe. 

Can you freeze Cranberry White Chocolate Chip Cookies?

You can make the cookie dough and chill it in the refrigerator for up to 3-4 days. Allow coming to room temperature then continue with to bake the cookies. Baked cookies freeze well for up to 3 months.

What better way to celebrate World Chocolate Day than with a batch of freshly baked chocolate chip & white chocolate and cranberry cookies.

Ingredients

Units Scale
  • 250g Butter (softened)
  • 100g Erythritol/Sugar
  • 350g Flour (sifted)
  • Pinch of Salt
  • ± 80 g Chocolate Pieces/Chips
  • ± 80 g Dried Cranberries (soak & drain)

Instructions

  1. Add butter, salt, and erythritol to a mixing bowl and whisk together till fluffy.
  2. Add in flour and mix till the mixture resembles sand.
  3. Turn out onto a work surface, add chocolate pieces/chips & cranberries, and bring them together gently to form a dough.
  4. Wrap in cling wrap and chill in the fridge for 40-50 minutes.
  5. Remove from fridge, cut out circles then place on a baking sheet and bake at 180 for about 25-30 minutes or until browned.
  6. Enjoy!!
  7. * Wrap dough in clingfilm and freeze. Thaw in refrigerator before slicing and baking

  1. Dried cranberries are a favorite to use around here, ever since we lived on the Long Beach Peninsula in WA state. the cranberry harvest is a wonderful time of year. Plus the soak and drain method for this recipe is a great tip, not one I had thought of before.

    • I love any berry in a cookie or bread, and many a time will soak it in a strong brew of black tea! We have a herbal tea, called Red Bush, SA product, that I typically use for soaking and it does also give a lovely additional taste to baking. Enjoy
