What do you get when you mix leftover rice, milk, and a little love? Creamy Classic Rice Pudding. It’s simple, cozy, and gone faster than you expect.

- 1 1/2 cups cooked rice
- 2 cups milk (keep 1/2 cup aside)
- 1/4 tsp salt
- 1 egg, beaten
- 1/4 cup sugar
- 1 tbsp butter
- 1 tsp vanilla extract
Instructions
- Pour the cooked rice, 1½ cups of milk, and salt into a saucepan.
- Set the heat to medium and stir non-stop for about 15–20 minutes. This step makes it extra creamy, so don’t rush or skip the stirring.
- Slowly add the beaten egg to the hot mixture, a little at a time, while stirring so it doesn’t scramble.
- Pour in the rest of the milk and the sugar. Keep stirring.
- Let it cook for another 2–3 minutes, until the egg sets.
- Take it off the heat and mix in the butter and vanilla.
Want to mix it up? Add raisins, cinnamon, or a dash of allspice. But honestly, it’s amazing just the way it is. Even on a hot day, this pudding disappears fast at our house. Next time, I’m making a double batch again.
