Creamy Classic Rice Pudding

Description

What do you get when you mix leftover rice, milk, and a little love? Creamy Classic Rice Pudding. It’s simple, cozy, and gone faster than you expect.


Ingredients

  • 1 1/2 cups cooked rice
  • 2 cups milk (keep 1/2 cup aside)
  • 1/4 tsp salt
  • 1 egg, beaten
  • 1/4 cup sugar
  • 1 tbsp butter
  • 1 tsp vanilla extract

Instructions

  1. Pour the cooked rice, 1½ cups of milk, and salt into a saucepan.
  2. Set the heat to medium and stir non-stop for about 15–20 minutes. This step makes it extra creamy, so don’t rush or skip the stirring.
  3. Slowly add the beaten egg to the hot mixture, a little at a time, while stirring so it doesn’t scramble.
  4. Pour in the rest of the milk and the sugar. Keep stirring.
  5. Let it cook for another 2–3 minutes, until the egg sets.
  6. Take it off the heat and mix in the butter and vanilla.

Want to mix it up? Add raisins, cinnamon, or a dash of allspice. But honestly, it’s amazing just the way it is. Even on a hot day, this pudding disappears fast at our house. Next time, I’m making a double batch again.
